FROM NICARAGUA TO NORTH CAROLINA

OUR STORY

It all started in January, 2016, when Jennings and her husband Chuck bought a small boutique hotel in San Juan del Sur, Nicaragua. Wanting to offer something special to guests with their breakfast, Jennings started making muffins, donuts, cinnamon rolls, and french rolls. Pretty soon, all the TripAdvisor and Booking.com reviews were talking about the baked goods, and after a few months, San Juan Surf & Coffee asked Jennings to bake for them. Jennings went home and told Chuck, "Well, I accidentally have a bakery now!" And thus The Accidental Bakery at El Pacifico Hotel was born.

Due to some health issues, the Wrights moved back to North Carolina in September, 2016, and Jennings thought she'd see if this little bakery thing would work as a part time pop-up-shop business, a couple of weekends a month. The first pop up was at Beaufort Linen Company on Front Street in October, and sold out in an hour an a half. By Thanksgiving, the house was busting at the seams! The first space on Wellons Drive was rented and set up to be just a commercial kitchen, with the Grand Opening party on January 28. Many people begged for "open days," so we started with one day a week.

By June, the bakery was open 5 days a week and had 4 employees. In November, we moved to a much larger space and added seating, a meeting room, a larger display area, and a book and retail gift shop.

UPDATE: Due to Hurricane Florence we have decided to close the retail shop as of November 1, 2018. This change, though a difficult one to make, will allow us to grow production of our crazy addictive and popular Outer Banks Granola. We are still taking special orders, and will be at the Olde Beaufort Farmers Market every Saturday (plus the special Holiday Market on December 15, 4:30-8:30) for the remainder of the 2018 season.
